First look at the top for two small intentations and puncture both with a nail 
or heavy knife, then drain the liquid.Take a very heavy cleaver(the kind a 
chef will use for butchering) and smack the top about 1/2 inch below the 
pointed end,in an upward angle.This takes practice you'll probably ruin a few 
before you get it down.Soaking the  coconuts in water for a hour or so first 
helps to prevent the coconut splitting and holding it in a vice also helps.I 
would not reccomend doing this behind the bar as pieces can fly every 
where.you can buy a small grinder (by drexel) will a cutting  edge that will 
work but it leaves sawdust on the inside.
