Confused please help...

Hello all,
I'm new to Bartending and relatively new to this forum. Going through all the
books and web site I can find and some of them contradict eachother.
Forinstance some say shake and some say mix a Sea Breeze and some say float
and sone say build the cognac in a classic champange cocktail. Also different
recipes use differnt quantities of ingredients and ratios. How important are
these variantions? Where do I find the origional recipy or the best?
I've also been a bit confused about measures I know what Oz and ml are but
what is a cl in relation to the others.
Any help is much appreciated
