we have a sign above our bar that lets it be known that if you use a card to 
start a card and the tab is still open at 2, there will be an automatic 20% 
gratuity, reguardless.  it really encourages us to open tabs with credit 
cards.  sounds like you work in a coprorate restaurant and they can be tricky 
but it works for us.  we rarely have issues with call backs or walk outs and 
we get the pleasure of drunk mid-shipman!
