Subject: Bartender does not immediately take cash payment

I am not a bartender but have a question about a specific bartending action.  
I am male (married and wearing ring).  The last couple months I have weekly 
visited a nice sports bar/grill for two (and only two) Happy Hour drinks 
(beer).  Obviously there is an attractive younger female behind the bar.  She 
too is married (wears ring - but one one busy night I did notice she was not 
wearing it).  She is very "sweet", often referring to the male patrons as 
"sweet", "babe", etc.  And often when she would place the beer on the bar she 
would say "There you go my dear".  So she is somewhat flirtatious.  But what 
she also does when she places the beer/drink on the bar is to NOT take the 
cash money immediately.  Sometimes she might even pass by and say "I will be 
back for that in a moment". 

Is this just flirting?  Being classy (I can see not immediately grabbing the 
money showing elements of class)?  Some sort of "stealing" scheme?  As I said 
I began to frequent this place, and always ordered the same two $3 happy hour 
beers and left a total of $4.  She knows that.  Sometimes I wonder if they are 
only accounting for one drink and pocketing the rest.

Side Note: I have since stopped visiting this place because I beginning to get 
the wrong thoughts in my head (I would never take action - but found if I was 
looking forward to going to the bar because she was there it is not a good 
sign).  This is probably a whole other topic about flirting with the customers.
