Quit.

Edited to add after reading Miss Charming's posts:  In my area....  Generally, 
servers tip out the bartender a decided percentage minimum (hint:  tip more 
for favoured service) on either of their gross sales or liquor sales.  Tipping 
the chef is just wrong.  They are, or should be, salaried.  Serving the tables 
with the drinks is a real stretch too.  Your job as bartender is to remain 
behind the bar making cocktails.  Servers serve tables in a dining room.  Yes, 
you could be asked if you'd like to pick up a table/tables (and keep the tips 
earned from same) but not serve the entire dining room with the drinks to the 
diners that wish to order an alcoholic pour.

I know these are hard words to read because I know you already feel taken 
advantage of without reason.

I wish you luck in a new situation.

Also to add:  Don't really fear the jumping around stigma.  You gotta go where 
you can make money to pay your bills.  Managers understand that.  Cleveland is 
extremely seasonal -- great summer patio bars and great winter sports sorts of 
bars.  Same with restaurant bars, craft cocktail and the high end clubs.  It 
is not unusual to have a list of bars worked on a resume, even and especially 
when it is all at the same time.  (I worked at three different venues 
concurrently for years).

Trends change, and places do peak and burn out.  Then there are those similar 
to where you are where they will never keep a good bartender.  Sometimes 
consider if you are a good bartender that a reputation of a particular venue 
may even harm your own reputation.  ;0)  Get out!  Choose to admit/confess, 
move on and grow!  (I have been hired at "x" but will never admit to it after 
figuring out how screwed up management was after a decent assessment and 
seeing how it was all working out... only to find after I said "no thank you, 
but thank you" and seeing the establishment closed within three months).
