First as a whole, why give that fellow co-worker that much power?  Do you 
really need the validation of everyone liking you?  Who really cares if he/she 
is being rude?  To me, that speaks more about him/her than yourself.  Keep 
plugging away, possibly harder than ever.

Specifically:

Stop doing that.  Immediately.  If it is the owner's/management's requirement, 
I'd seek a new gig.  However, that is me .  I understand in this economy 
such a move may not be an easy choice or luxury to switch situations.  But you 
do understand that is a gross misrepresentation and a very shady business 
practice?

Always restock.  Everything.  Set up the next tender for success and for a 
seemless shift change.  It matters not if it is a rarely used spirit.  You may 
not use it, but perhaps the next bartender does.

That isn't that uncommon.  If par is 3 bottles, then 3 should be maintained 
and stocked for the next shift.  I had a day bartender's (who really was a 
full time server) head explode because she couldn't understand why it was 
unacceptable to leave three overflowing bus pans and a cold/dirty water four 
compartment sink for the next shift.  I made her stay to provide fresh, warm 
water and bus tubs -- of course she stomped the entire time with a scrunched 
face.  Feh.

It could be a big deal.  Thought process:  prevent additional stress or 
effort(s) and stock to prepare.  There isn't a server or guest alive that 
enjoys the excuse "I don't have that on hand and you'll have to go to the main 
bar and wait for it there" or "I'll have to go and get that from the main bar" 
(either way it only equals more wait ).

So?  Don't let that stop you from greeting her with a cheery smile.

I wouldn't assume that "everyone" will be on her side because you are a rookie.

What I wrote above.  Good gigs are few and far between for most, so don't give 
that person that much power to hinder yourself from doing your own job.
