If I had it to do over again, I would have worked in more different places 
than I have. I've worked in high volume restaurants and a country club. Never 
a dive bar, cruise ship, or nightclub. If you're thinking of owning your own 
place, it seems like it would be a good idea to get a wide range of experience 
to see how other people do things. In some respects it's not a good idea to 
re-invent the wheel; learn from other's mistakes.
