

Cash is king. For one month or one quarter - offer to share some of the
increase in revenue and yes I do mean revenue not profit. If you can track it
give them 50% OR 25% or whatever you think is appropriate and will motivate
them. Figure out what the profit for improved upselling for every month after
the contest to decide what is appropriate. The increased check average should
result in increased tips giving them continuing motivation. At the very least
you have taught new habits that will stay in place simply from their own
inertia. You reap the benefits of the upsells ever month and every quarter
thereafter.
