Well, they have to say something to stay in the game. The truth is that there
is a cocktail pyramid and although I like Kathy, Adam, and Robin, top trendy
predictions and ideas are at the top of the pyramid. The masses live at the
bottom of the pyramid and wait for what is at the top to trickle down. Many
absinthes (last years trend prediction) are now available in America and we
still have consumers at the bottom that have never heard of it or ask the
bartender if they serve that drink "with a spoon with holes and a sugar cube".
I actually sat at a supposedly hip trendy bar last week and asked the 30
something bartender for an Absinthe Drip (didn't know what it was) and then I
asked for a Sazerac (deer caught in the headlight eyes).
Anyway, my whole point is it depends on what demographic are you speaking of
targeting with sake and soju? One thing I do know is that sake will spread
like wildfire as soon as a rap singer adds it to a hit song or a famous actor
orders it in a movie.

During the 16th century reign of William III, Captain Edward Russell, (general
of the English forces) threw an extravagant party using a garden fountain as a
giant punch bowl. He filled it with 560 gallons of brandy, 20 gallons of lime
juice, 1,300 pounds of sugar and 5 pounds of nutmeg. The bartender filled a
small boat with punch cups and rowed around filling up the punch cups for
guests.
