need more advice looking for server/bartending job

Hello all,
I am somewhat new to bartending (took a bartending course several years ago,
found a couple of 1 day bartending jobs (parties) but gave up after not
finding a long term job and moved on to something else.)
I have read the posts about finding a job as a novice and have even applied
for server jobs as I have done this for a few months several years ago as
well.
problem is I have had no success; I have answered ads on craigslist.org left
and right and even had a couple of on the spot interviews after tracking down
the managers.
my question is this: due to the very iffy overall economy, my lack of recent
and significant experience in both bartending and serving and I live in
Chicago where there are no shortage of restaurants/bars but lots of
competition and I am an average but professional looking male in a town with
lots of attractive females who have bartending/server experience, what can I
do? Just be persistent and keep looking for that one face-to-face interview
where the manager will give me a break or is there anything else I can do to
give me the advantage if there is one to be had?
PS...I am also employing the visit the bar I'd like to work at tactic.
