There's nothing wrong with giving a free drink/shot to a guest unless 1.  they 
are already intoxicated 2.  you're stealing from your bar.  Yes, there is 
something called a "spill sheet" -- obviously this is the count for how many 
drinks are spilled during the night and will help the manager to get a better 
idea of how much alcohol to expect when doing inventory.  Now is it ok to put 
drinks on this list?  Well, that's up to you, but just know that if you do get 
caught then you'll probably be fired.  It's probably a better idea to buy the 
guest a drink out of your tips, but just be sure to use the "well" alcohol so 
it's not that expensive.  Also, some bars give each bartender 1-5 drinks that 
they can giveaway to regulars each night so find out if your bar has this 
available and if not then suggest it!
