Subject: Consulting for a new opening

Hey webtenders, long time no see

I am negotiating my first independent consulting job for a brand new 
nightclub.  My proposal includes:

-staff training and protocol design
-specialty cocktails and menu
-POS layout
-Product placement for FOH and BOH
-general high volume practices advising

I am bringing 9 years of opening experience from the barback, bartender, and 
head bartender levels.  I have been part of 6 brand new openings of world 
class clubs.  I have done these duties as an in-house employee, but certainly 
not at the rate I'd have liked.

I foresee this to be a 3 month job, but my real question is how much do I 
charge? I am leaning towards an hourly rate as opposed to a lump sum/salary. 
Anybody do this before?
