My advice would be pick the club you most want to work at, and take the
cocktail position. Then prove to them you are ready to bust your butt, work
hard, and that ou know what you are doing in that environment. Place are more
likely to promote a hard worker to bartender, than hire someone they don't
know and therefore don't know if they can trust right off the street.
If you keep holding out for a bartender position you may end up getting it in
a place that is not one of your top choices. I think it would be better to
tough it out for a little while and get the job you really want. Let the
hiring manager know you intention to move up, and ask them what they feel a
realistic time frame would be.
