I work fine dining as well and although I've never tried it, I always wanted 
to take a spin on the Apple Martini and make a variant of the Washington 
Apple.  Ingredients would be:

6 parts Crown Royal
2 parts Pucker Sour Apple 
Splash of sour mix
Shake and strain into cocktail glass

If your customers like martinis, you could try the Vesper from Casino Royale:

3 parts vodka
1 part gin
1/2 part Lillet

And finally, another experimental drink that I saw once by the name of the 
Lemon Curd (dunno how good it is, but I've wanted to try it):

6 parts gin
2 parts Limoncello
Splash sour mix
Shake and strain into cocktail glass
