I don't necessarily agree. Keys or no keys, in many states it's still illegal 
to overserve, serve an obviously intoxicated person, or even be intoxicated in 
public. Usually the guests start asking for more alcohol the drunker they are, 
so this is your cue to either politely cut them off, or pour weaker drinks.

However, on the general topic of doubles -  you are correct. Generally you 
pour exactly twice whatever your bar's standard pour is, charge double (or you 
may have a double button for your POS that does this for you or charges less 
than double), and obviously less mixer will fit into the glass.
