There's already a TON of good posts there covering your topic. In fact,
there's a thread that covers from open to two years into the operations of a
small bar in California, very interesting reading. 90% of the regular posters
there own their own joints, or have previously.
While having bartended private gigs might be acceptable experience to land you
a beginner's bartending gig at your local pub, it's certainly not going to
help you start your own bar, and your business background isn't going to
gaurantee any success either.
I think you have a couple of options - Spend a couple years getting some hands
on experience, ideally in some small bar where you can both bartend & manage,
and see a first hand perspective of the operations, or find someone you can
trust that has a load of experience, and can make it happen for you.
There's literally a million little things that someone with no experience in
this business don't take into consideration, but have huge impacts on the
business such as insurance, liquor licenses, state alcohol regulations, music
licensing fees, pest control services, cleaning/supply contracts, inventory
control, staffing, shrinkage, etc, etc, etc.
