Be on time, be polite, dress appropriately for the establishment, if you think 
they will give you a try out then don't wear heels you'll fall and embarass 
yourself.  If it's just an interview be honest and tell them you are new but 
you can do it and if they would just let you get your foot in the door you 
would be happy to just "bar-back" or cocktail until you know more. I've never 
hired a bartender off the street, I make everyone bar back first...so when 
somebody tells me this then I know first and foremost they want a job and will 
show up for work, you can coach someone to bartend but they have to be there 
for you to do it.  Let them know your gonna be there and your always gonna be 
in a good mood.
