I agree - in many places servers can make more than bartenders. I think an
exception to that is club type bars where the bulk of the people order their
drinks directly from the bar. In a restaurant bar environment, most of your
tips come from server tip outs - but if you can build a decent amount of
regulars in the bar, you can end up doing pretty good.
From my experience, in restaurant bars, you have a "cocktail server" working
during the busiest portion of the shift, ususally waiting on bar tables. If
you bust your ass, you can cut the cocktailer early, or have them not come in
at all on slower nights, which will give you the chance to build some regulars
and earn more. I'm sure once you're doing it for a while, you'll see some
opportunities to earn more if you're willing to work hard.
