For a dry martini I would stir the vermouth over the ice - then strain out 
(into the sink/ floor) - leaving only a coating of vermouth on the ice. For a 
very dry martini I would be inclined to use a vaporizer or fine spray to add 
the least vermouth possible. 

In a normal martini, on the other hand, I would leave the 5mls of vermouth in 
the mixing glass
