

That is assuming that the bartenders split tips and they agree or the house
requires they give the barback a certain percentage. where ever I have worked
if we had a barback there was a % used as a guide not a requirement. The
employer has no right to require you give a certain percentage of your
earnings to someone else. Thus you have some people who will always give the
guide % and others who will be over or under depending on the work done etc.
Servers are in the same position with bussers and backbar tenders are in the
same position with servers. You have no clue as to how much a server makes in
a given night you might have a good guess but it is just that a guess. So if
you work in a place where everyone shares the tips and you as the barback get
18% of that you are one of the fortunate. Just like with patrons on occasion
you get screwed and don't enjoy it.
