the course i'm taking requires me to

What is this, the John Belushi Memorial Bartending School?  What happens if 
you just taste the drink?  Do they kick you out of the class?  Beat you with 
rubber hoses?  Here's what I'd do.  Every time you're about to drink one of 
you mandatory cocktails, point excitedly is some direction yelling, "Oh my 
God, look at that!!"  When everyone turns to look you dump your drink down the 
sink and when they turn back around you just kind of wipe your lips like you 
just drank it and say something like, "Jeez, did you see that?" or "Man, you 
just missed it!" or "Wow, you don't see something like that everyday."

Alternatively, you could simply make your point in a more graphic form.  Let 
me tell you a little true story.

When my brothers and I were kids, my mom would occasionally make us eat 
brussel sprouts.  We hated them (still do).  One day, the middle brother said 
that if he ate one more bite of brussel spprout he'd throw up. My mom wasn't 
buying that at all and made him eat one more bite.  He threw up all over the 
table.  We never had to eat brussel sprouts ever again.  My brother sure took 
one for the team but it was well worth it.

I suspect one good barf all over the instructor should solve your dilemma.
