Perfect means an equal balance of sweet and dry vermouth.
The amount depends on the drink though.
Less for martini's more for manhattans

Old fashioned is actully a drink itself.
- Muddle a cherry, orange wedge, sugar, and bitters in the bottom of the glass
- Add ice
- Add bourbon (or scotch or whatever they have ordered, bourbon is the default)
- Fill with water
