i have a bottle behind me on the back bar, and i keep a bottle of patron 
silver in the left rear part of the ice bin next to the white wines and 
champagne, buried under the ice.  at the start of every shift one of the 
things i do is ice the patron bottle and put my special pourer in the patron 
bottle.  i go through alot.  saves me plenty of time if the patron is ice cold 
and i don't have to mess around with chilling it.  lots of southern 
californians love chilled shots.
