i agree, many times i have split with barbacks because if they weren't there,
i would not have made the money i did.
funny thing is, after i split with a barback through good nights and bad
nights, the barback tends to understand if a bartender is being a cheapskate
or is giving them a fair and honest amount of the cut.
i remember when i barbacked. I would be at the bartenders beck and call, have
them stocked up all night, pour drinks for them and make them money. at the
end of the night he/she would give me that standard BS line, "it was a bad
night". throw me $20-30 bucks when i made them at least a hundred and i saw
them take a few C-note tips, along with their $1-5 per round tips.
i knew i was going to get tipped shitty when the bartender would be counting
his/her tips and say, "it was a slow night".
yeah, i am there to make money, but i tend to make better money and better
work relationships when i tip the barbacks more than 15%.
