To start with, because this recipe includes pineapple juice and orange juice,
it is not a true Mai Tai. This drink that this bartender has shown you is more
like a fruit punch.
This "Mai Tai mixture" will hopefully contain some sort of sour (lime juice),
and some sort of liqueur or syrup.
My favourite Rum punch is as follows:
2 shots Myers Dark Rum,
1 shot Fresh Lime Juice,
1/2 shot Orgeat Syrup,
1/2 shot Apricot Brandy
1 1/2 shot Pineapple Juice.
Shake with ice, and then strain into an ice-filled tall glass; garnish with a
lime wedge and a sprig of mint.

A Mai-Tai is never blended, though the original (Trader Vics) recipe is served
over crushed ice.

Crushed ice: it helps dilute the drink, and keeps it colder; greater surface
area etc etc.
