Any "type" of alcohol can be well, call, or premium.

Your "well" liquors will essentially be your "low end" stuff. The spirits of 
minimal acceptable quality for your establishment. For some places this will 
be on the virge of being rot-gut, while others will use what might otherwise 
be considered "Premium" brands.

"Call" liquors will be the brands you have on hand for dealing with "requested 
preferences". These brands could be as good, better, or in some situations 
even worse then what you are using for your "Well" brand.

"Premium" brands will be the upper end products that are for either those with 
discriminating tastes, or who just want to keep up with the Joneses. And the 
price will reflect this.

For an example using "Gin": A common "Well" brand might be "Gordon's", a 
common "Call" brand might be "Tanqueray", and a preimum brand would be 
"Junipero".
