Was the place popular enough to maintain a profit stream with the old
regulars? Was the old staff there for a long time, or do you hire frequently?
If it's not profitable, then by all means, shake it up. But if it's
profitable, be careful you don't exert all this energy just to lose business
because your regulars decide they don't like the new crowd, and the new crowd
then doesn't stick around.
