"Sandusky Evening Star," 9th September 1903
"To make a "Peggy O'Neil" you bury the glass in the ice until the splinters
hold fast. A quarter section of lime is wispedover the top of the ice, packed
tightly in the glass and then the whisky is poured in."
"The top is then framed in mint stalks and a dash of parfait armour cordial is
added. The nose is buried in the fragrant mint, the throat elongated, eyes
closed and "Peggy" goes chasing down the throat like oil on troubled waters."
"The presence of the cordial, old timers declare, prohibits partaking of more
than 20 "Peggy O'Neil's" a day, and hence say it will never become popular."
Personally I would make this drink as follows:
2 shots Bourbon,
1/2 shot Fresh Lime Juice,
1/4 shot Gomme Syrup (or to taste)
Build over crushed ice, and then churn the ice thoroughly. Float 1/2 shot
Parfait Amour on top. Garnish with Mint, lots of it.
