i have a couple things i do if my barback steps up and takes customers without
my permission.
plan A: after the barback makes the drink for the customer and tries to make
the sale, i pull him/her aside and explain, "you are the barback, i am the
barfront" "when a customer asks for anything, explain that the bartender will
be right with them" pretty simple.
plan B: (passive aggresive, i dont recommend, but have done this when pissed
off) i let the barback take the order, make the drink, and when it comes time
for him/her to tender the money, i ignore them. at our place, we have our own
banks and our own 'swipe cards'. the barback needs my 'swipe card' to ring up
the drink. so i leave the barback hanging. let him make a fool of himself.
like i said, there are better ways to get the point. like plan A.
