Hey Chris,
I just finished a two-week course, too.  I'm surprised that your school didn't 
make you memorize the recipes.  We were required to know about 150 drinks - 
glassware, straw type, garnish, ingredients, etc.  I think that you're going 
to have to suck it up and start memorizing.
