Index cards will be useless when you have wall to wall people in your bar 10 
people deep. Know your basics like White Russians, Sex on the Beach, Long 
Island, etc. You will serve those daily in high volume places. When a customer 
asks me to make a drink that I don't know, I usually ask them politely what is 
in it. If they can't tell me, I then ask them what it tastes like and then 
make something similar using what liquors I have. 

How did you graduate from bartending school and not know how to make drinks 
without index cards?
