Contemplating bartending school in FL

Hi, all. I have recently developed an interest in bartending and I am
considering enrolling in a bartending school. Here are my questions:
*I am a 43-year-old female, but I do look young for my age. Am I considered
too old for bartending? Is there a general age in which people begin to do
this? Will I be considered "the old lady" in my class?
*Is it best to go to school first, then apply for jobs? Does bartending
school result in getting better jobs?
*What are the best schools in/around Florida? I have contacted the ABC
Bartending School in Orlando, but that will be an hour+ drive one way for me
and I would like to find a closer location to Melbourne, if possible.
*Upon getting my first bartending job, does the establishment start a newbie
with an afternoon shift (or slow shift) to break you in, or do they start you
out with night shifts (basically just throwing you in the pool!)
I appreciate any help you can give me!!
