I was eating at a hibachi restaurant tonight when an idea for a venue struck
me.
Why not build a bar with, instead of one bar, multiple small bars, each
dedicated to a particular spirit. You'd have a gin bar, a tequila bar, a rum
bar, and so on. You stock each with a good selection of each spirit, plus the
appropriate cordials and liqueurs for each (scotch bar would get vermouth but
not apple pucker, etc.)
The staff would be trained to particular spirits - your bourbon bar bartender
would be particularly knowledgeable about bourbons, history of, bourbon
cocktails, brand specific knowledge, etc., and the experience wouldn't just be
to drink, but to learn about the various brands, spirits, and histories.
The target consumer base would be that of Pegu and Milk & Honey, the consumer
who appreciates the finer things in life.
This is very much off the top of my head, but I think it could be an
interesting concept. The one big drawback I see would be parties of people
who drink multiple spirits - Husband drinks gin, wife drinks vodka.
