On Texas, as much as I hate to say it, your concept for a singles bar would be
most successful in Dallas. I know the big 3 scenes in TX fairly well
(Houston, Austin, and Dallas) and from my experience, Dallas is your best bet.
Houston, from what I've seen, simply doesn't have much of an upscale club
scene to begin with - this city just doesn't thrive on that sort of
exclusivity. There is currently ONE club with a membership list right now,
and they only opened up last weekend. It's a very laid back town - I don't
see it working too well.
Austin is really just a big college town. While there are plenty of singles
there, being a college town, college kids generally can't afford steak and
lobster. The general idea (singles bar) might work very well if you change
your target audience to a younger one. Hell, that's what most college bars
are anyway, to an extent.
Dallas thrives on upscale and exclusivity. Personally, I dislike the city
quite a bit, partially for that reason (there are others, but they don't
pertain). Dallasites are pretentious and LOVE to name drop - to the point
that if you ask someone from Dallas where they're from, instead of saying
"Dallas," they'll generally name whatever town or suburb they live in that's
just outside Dallas metro. I'd say some market research would be in order, of
course, it's been a bit since I've been there so I don't know what your
specific competition would be, but I do know the general attitude of the city
loves that upscale, membership mentality.
