When you get the slip back, it's already been authorized, but not finalized, 
for the total amount. As your server, I would bring the slip back to you and 
gently explain why I can't accept it as what you wrote in the 'total' line 
doesn't cover your bill.  As an experienced server, one uses tact, and 
professionalism so as not to embarrass the guest, and usually gets a bigger 
tip in the process.
