If you want it summed up in one phrase, it's this: "The shitkicker." 

That being said, having worked (and trained) some pisspoor barbacks, I've also 
worked with some really switched on and intelligent barbacks. There was this 
one guy I would happily have traded the other three bartenders for, and just 
let the two of us handle the crowd. His work ethic and dedication was 
seriously that noticable.

I know a bartender (now back here in Bris, but was in London) who took his 
barback with him to every bar he worked at in the UK. They had such a 
relationship that all the tender had to do was point, motion, or grunt and the 
barback knew exactly what he wanted. 

It's the bottom rung to start at (aside from glassie / busser), but as Bippo 
said once

Any Webtender will tell you having decent barbacks with a brain between their 
ears makes the night a whole lot easier.
