ok, here is my 2 cents. I worked at a restraunt that did alot of Bar buisness
and just got thrown back there. I read books and just taught myself everything
that I would have paid a school to teach me. I know several people that went
to bar school but don't have a clue about things. try learning on your own at
first. That way if you don't like it, you didn't pay the cash to a school to
learn. And if you still think you need to go to a bar school after that you
always can.

About barbacking, I've never had one, I've always worked at places we did
everything ourselves. But the legal bartending age in TX is 18, although most
places don't like to hire under 21.
