The one I see is poor leadership. Most bars need a head bartender who works
the high volume nights. Otherwise everyone tries to take control and that just
ends up bad. If a bar doesn't have a leader, it leads to a power vacuum and
the whole concept of team goes out the window. These power struggles often
lead to infighting and eventually people get fed up with it and leave.
In places with a group of experienced bartenders who work well together, a
designated leader isn't really needed.
