Another large reason for a high industry turnover rates (in general) is that 
many people view bartending/serving as a "transitional" type job - something 
they do to bide the time until they earn their degree, find a better job, etc. 

Also, overall, bartending is very demanding and I think it's easy to burn out 
rather quickly.
