The bar school worked for me! But then I was a forty-year old male starting 
out in a new profession with no prior experience in any part of bartending or 
cocktail serving.
But, even if the bartender does want to train you the bar management may not. 
Then it wouldn't be up to him/her. If the bar management wants to train you, 
then it might not be up to the bartender anyway. Their input would probably be 
taken into account though.
Bar school would be the way to go if you don't already have an "in" with an 
establishment.
