The problem with owners running tabs and not paying for them is that you have
to have absolute trust in whoever runs the tab - what's to stop a dishonest
manager or bartender from padding those tabs to comp drinks for his friends?
Proper recording of what gets poured is essential, but paying the tabs out
nightly is truly the way to do it, for honesty's sake.
