Heh, heh, heh.....I, too, have like a gigantic esspresso machine, as the 
centerpiece to my bar.  First of all, I don't like it because it takes up waay 
too much bar space, and it's positioned right behind my pour station (so my 
back bar liqours are off on shelves to the left or right....not the most 
efficient setup!).  Of course, I also hate the fact that it is time consuming 
to foam milk!  I also service the restaurant, and every time a special 
(non-alcohol) coffee is ordered, the server usually comes by with an "I'm 
sorry".....kind of a running joke!
A couple of things I try to remember is:
-The lounge makes a huge profit on these coffees (coffee and milk are pretty 
cheap)
-Many of these coffee drinkers come back other times for 'real' drinks...or 
they bring friends who will drink.
Oh, and we also put the price up on theses coffees.....$4.00 before tax for 
any coffee I have to steam milk for.....that makes it almost as expensive as 
drinks!
There has been a few extremely busy nights where the espresso machine has 
been "broken"......
