Damn right. all cash tips get pooled together. the bar manager/bartenders/bar
backs/supervisors - all get an equal share of it (an exception being if
someone leaves early)

one word - TEAM
let me elaborate this with a couple of events of last night.
i've got a couple of American guys sitting at the bar and we strike up some
laughs. the drinks keep flowing, the one liners and counters getting wittier.
they might do mundane jobs, but they are cool guys. This chick, sitting at the
table with her girlfriends, that I was flirting with - comes up to bar with a
glint in her eye and orders. I drop the line - 'Sugar, while I mix you the
best Mojitos ever, I want you to meet my man..... (the hornier of the two
guys)" The rest as they say is history. As he leaves with his new found lust,
he thanks me for the night and a 'golden handshake'. Mucchhos Grathias senor.
now while i was amusing and entertaining my guests,(my service being a little
slower) the other bartender that i was working the station with, has been busy
picking up the pieces. The supervisor has been communicating all info for
party bookings, making sure no till runs outta change etc. the bar manager has
been looking out for potential problems, making sure everyone is happy and
chipping in with the drinks when needed. the hero bar backs have been running
around replenishing clean glasses, ice, fruits, liquors, juices, big mac's
the idea being that the efforts of the entire bar-team help make our guests
time at the bar an enjoyable experience, and we all reap the rewards together.
On the same night, one of the bartenders working the other section of the bar
made some kind of fuck up with a tab transaction and had two unpaid bottles of
champagne with his name on it. uh oh! everyone chips in a tenner from their
tips. you take the rough with the smooth. case closed.
