Kate,

Firstly, be real careful to ensure that you don't hurt anyone (it's more 
common than you think). You do this by...

(i) Designating a central area (bar) where all flaming drinks are prepared, 
this stops people from setting themselves alight in a corner somewhere
(ii) Instructing the person on excately how the drink should be consumed prior 
to lighting it
(iii) Get THEM to light the drink, in front of you,  following your 
instructions) - if they burn themselves, it's thier own fault.
(iv) Have a chaser prepared to help wash it down

Now that that's out of the way...

FLAMING BLUE FUCK
Mix 15mls Sambuca and 15mls cointreau into a tulip (wine) glass
Ignite the drink by holding a flame to the lip of the glass and rolling the 
glass around
When liquid has ignited, pour flaming mixture from a height into a tumbler 
glass, bringing the wine glass down on top of the tumbler - thereby 
extinguising the flame - drink in one go

LAMBOURGHINI
Layer 10mls Kahlua/ 10mls Sambuca/ 10mls/ Galliano/ 10mls Drambuie/ 10mls 
Green Chartreuse into a martini glass
Pour a shot of Blue Curacao into a spirit shot glass
Ignite the Chartreuse by holding a flame onto the mixture
Person stands by with a LONG straw, ready to start drinking
On your command the person begins sucking the mixture through the straw as the 
shot of blue curacao is poured in (they should ideally finish the drink in one 
go)
It is recommended not to have more than ONE of the above drinks in a night

HIGHLY VOLITILE
Layer 15mls Green Chartreuse over 15mls sambuca in a spirit shot glass. Pour a 
thin line of Chartreuse down the bar and ignite from the end. This should 
spead to the shot glass and ignite it - do not let it burn more than 15 seconds

When igniting the area around drinks it is often more effective (and cheaper) 
to use lighter fluid instead of alcohol (just don't put any in the drinks!)
