Exactly. Build a par and stick em to it. If they can't do that, enforce it.
If it can't be enforced, be a dick about it - after the weekend shift is over,
UNstock the bar. Any bottle that is unopened gets put back in storage. Extra
bottles get married. Make it a pain in the ass for them, let them know that
if they're willing to do the work, you are too, and you'll quickly find that
things shape up.
