How you tap a keg really depends on the tap.  The one thing all have in common 
is that they have 2 main settings.  One that lets the beer flow and one that 
does not.  Make sure you havce it set so that it will not flow (i.e. no 
airflow on a CO2 system) or you might get a face full of beer.
Sipstick are just like anything else, as long as you keep your hands clean it 
really doesn't make much difference, but you should try to avoid grabbing it 
by the tip where the mouth goes, also avoid cupping a glass with your hand 
over the top, that bothers many customers.
Soda guns all vary.  Most have a C for Cola and a D for Diet Cola, other than 
that it depends on who makes the gun, what liquids are available through it, 
and the preference of the bar.
