Are you applying for the bartending positions and then saying that you'll 
accept whatever they've got, or are you applying for "any position." ???  
Doing the latter may increase your chances - it'll show a manager that you 
truly are willing to work from the bottom up, as opposed to going for that 
bartending gig and then having to eat your pride (in their eyes).

Second, there's nothing wrong with leaving experience off of a resume, IMHO - 
you're not lying, you're simply not telling them everything about you.  It's 
not dishonest, at least not to the same degree.  I'd think VERY carefully 
about this before you actually do it - you may surprise yourself with what an 
honest resume can actually get you, but I could be wrong.
