 As stated previously, the legal consequences differ from state to state. My 
roommate (also a bartender) was pinched in a sting by the local cops and was 
carted off to jail. We bailed him out and the bars lawyer took it from there. 
The charges were eventually droped but the bar still had to pay the lawyers 
fees. While we don't have incident logs or ID lists, we do have video cameras 
and they come in VERY handy when you have to appear in court. They also help 
stop skimming and control buy-backs.
