Gary Regan (joy of mixology) accepted somewhere that muddled fruit in an
old-fashioned is not authentic, but that that was the way he was shown how to
make an old-fashioned when he arrived in the US (in the 70's?)
Dale DeGroff thinks that Old-Fashioneds which do not use muddled fruit are
made for those people who just want sweetened whiskey
In my opinion Nidal is 100% correct that muddled fruit is a no-no in an
Old-Fashioned.
It is a shame that two such well-read and well-respected bar people as Regan
and DeGroff are condoning such a bad/ unauthentic way of making "The" classic
cocktail.
