A little worried

Quick background: Been working as a barback/cook/waitress for 5 months and
counting. Turned down a bar job at another place because I didn't trust my
co-worker. Found a second job as a barback at a high-class hotel.
Here's the problem that have me worried.
My new second job wants to train me as a cocktail server as well. This brings
me back to what happened at my current job (promises of me getting trained at
the bar, but instead trained me as everything).
I was thinking of going to my boss and just telling him why I am hesitant of
training as a server. But I don't know. I really don't feel like being lied
to again and the thought is just pissing me off. And I don't think moving up
is possible because I just found out that the bartenders stay there (all been
there for at least a year or more) and the cocktail waitresses as well.
I also thought about job hunting again, but the holidays coming up and then
the slow period...it will probably be all in vain unless I get lucky.
Any suggestions/opinons are welcome.
